
Radish microgreens add great flavor to any meal, but we decided to try something new! This pesto is a delicious add-on to sandwiches, charcuterie boards, or mix with steamed veggies.
To make this, gather the ingredients below:
6 oz Vista Microgreens Radish
1/2 cup Olive Oil
1 Tablespoon Minced Garlic
4 oz Shaved Parmesan
(For a vegan substitute, use 'Nooch' parmesan cheese substitute, found on Amazon)
2.5 oz of Cashews
Blend all of these ingredients in a food processor, then voila. It's so simple!
